One of the prized catches from the Atlantic and Gulf waters is the Amberjack. Known for its bold flavor and firm texture, the Amberjack fillet delivers a substantial, meaty experience, often compared to steak-like fish such as swordfish or tuna. The flesh is firm with large flakes, pale pink in color, and has a moderately high oil content, which gives it a rich, full-bodied taste. Amberjack’s robust flavor pairs well with bolder seasoning choices and cooking methods that bring out its depth, such as grilling, broiling, or smoking.

Due to its richness, Amberjack pairs excellently with bright, citrusy notes and spicy seasonings.
