Florida Pompano are a delicious and hearty fish caught right off the shores of North Carolina. A strong rich, sweet and oceanic flavor that has a taste similar to Mahi Mahi and Snapper. The meat of Pompano has a firm texture with a mild oily texture that cooks up white. Pompano stands up well to almost any cooking method including grilling, baking and pan frying.
Pompano is usually caught in-shore or near shore waters as they prefer high salinity environments along sandy beaches, oyster banks and grass beds.
