Wellfleet oysters are one of New England's classic oyster varieties, named for the town of Wellfleet on the outer reaches of Cape Cod, Massachusetts.

They're particularly well known for their pronounced ocean salinity, clean finish and distinctly briny character. For Madden's, they're an excellent contrast to the North Carolina oysters your regulars are accustomed to.

What makes them special?

  • Flavor: Bold, salty opening, followed by a clean mineral finish. Some harvests have a mild sweetness.

  • Texture: Firm, plump meat with a satisfying bite.

  • Appearance: Typically rough, gray-brown shells with deep cups, although shape varies by grower.

  • Growing environment: The tidal waters around Wellfleet Harbor, where strong tidal exchange and local growing conditions help shape their character.

  • Best preparation: Fresh on the half shell, with lemon or a little mignonette. They're also suitable for roasting.
